Handvo Recipe: A Savory and Nutritious Snack or Meal (Baked and Stovetop)
Handvo is a savory and nutritious snack or meal that is popular in Gujarati cuisine. It is made with a fermented batter of rice, lentils, and vegetables, and is typically steamed or baked. Handvo is a good source of protein, fiber, and complex carbohydrates, and is also low in fat.
Ingredients:
- 1 cup rice
- 1/2 cup tuar dal (split pigeon peas)
- 1/4 cup chana dal (split chickpeas)
- 1/4 cup urad dal (split black gram)
- 1/4 cup moong dal (split yellow mung beans)
- 1 cup yogurt
- 1/2 cup grated carrots
- 1/2 cup grated zucchini
- 1/4 cup chopped cilantro
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- Oil for greasing the pan
Instructions:
- Rinse the rice and lentils in a colander until the water runs clear. Soak them in water for at least 4 hours, or overnight.
- Drain the rice and lentils and grind them into a coarse batter. Add the yogurt, carrots, zucchini, cilantro, ginger-garlic paste, turmeric powder, red chili powder, salt, and baking soda and mix well.
- Cover the batter and let it ferment for at least 4 hours, or overnight.
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a baking dish with oil.
- Pour the batter into the prepared baking dish and bake for 30-35 minutes, or until the handvo is cooked through and a toothpick inserted into the center comes out clean.
- Allow the handvo to cool slightly before cutting into squares and serving.
Stovetop Instructions:
- Heat a little oil in a non-stick pan over medium heat.
- Pour a ladleful of batter into the pan and spread it out evenly.
- Cover the pan and cook for 5-7 minutes, or until the bottom of the handvo is golden brown.
- Flip the handvo and cook for another 5-7 minutes, or until the other side is golden brown.
- Remove the handvo from the pan and serve hot.
Tips:
- For a richer flavor, you can add a tablespoon of grated coconut to the batter.
- You can also add other vegetables to the batter, such as chopped onions, bell peppers, or tomatoes.
- If you don't have yogurt, you can substitute buttermilk or sour cream.
- To make the handvo vegan, omit the yogurt and use coconut milk or vegetable stock instead.
- Handvo can be served with a variety of chutneys, such as green chutney, tamarind chutney, or tomato chutney.
