Ingredients:

  • 1 pound shrimp, peeled and deveined

  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon chili bean paste
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup chicken broth
  • 1 tablespoon honey

Instructions:

  1. In a medium bowl, combine the shrimp, cornstarch, salt, and pepper. Toss to coat.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook, stirring constantly, until pink and cooked through, about 2 minutes. Remove from the pan and set aside.
  3. Add the onion, bell peppers, garlic, and ginger to the pan and cook, stirring constantly, until softened, about 5 minutes.
  4. Stir in the chili bean paste, soy sauce, rice vinegar, chicken broth, and honey. Bring to a boil, then reduce heat to low and simmer for 1 minute.
