Veg Manchurian Recipe with Manchurian Sauce
Veg Manchurian is a popular Indo-Chinese dish made with mixed vegetables that are coated in a batter and deep-fried. It is then served in a sweet and spicy Manchurian sauce. Veg Manchurian is a delicious and versatile dish that can be served as an appetizer, main course, or side dish.
Ingredients for Manchurian Balls:
- 1 cup finely chopped cabbage
- 1/2 cup grated carrot
- 1/4 cup finely chopped capsicum (green bell pepper)
- 1/4 cup finely chopped spring onions
- 3 tablespoons cornstarch
- 3 tablespoons all-purpose flour (maida)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying
Ingredients for Manchurian Sauce:
- 1 tablespoon oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 green chili, finely chopped (optional)
- 2 tablespoons tomato ketchup
- 2 tablespoons soy sauce
- 1 tablespoon chili sauce
- 1 tablespoon vinegar
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch mixed with 2 tablespoons water
Instructions:
To make the Manchurian balls:
- In a bowl, combine the cabbage, carrot, capsicum, spring onions, cornstarch, all-purpose flour, salt, and black pepper. Mix well.
- Add a little water at a time and mix until a soft dough forms.
- Divide the dough into small balls, about 1 inch in diameter.
- Heat oil in a deep-fry pan over medium heat.
- Fry the Manchurian balls in batches until golden brown and crispy.
- Drain on paper towels.
To make the Manchurian sauce:
- Heat oil in a pan over medium heat.
- Add the onion and cook until softened.
- Add the garlic, ginger, and green chili (if using) and cook for a minute.
- Add the tomato ketchup, soy sauce, chili sauce, vinegar, sugar, salt, and black pepper. Mix well.
- Bring the sauce to a boil.
- Reduce heat to low and simmer for 2-3 minutes, or until thickened slightly.
- Add the cornstarch mixture and stir until the sauce thickens.
- Add the fried Manchurian balls to the sauce and toss to coat.
- Serve immediately with rice or noodles.
Tips:
- For extra crispy Manchurian balls, double-coat them in the batter.
- You can also add other vegetables to the Manchurian balls, such as broccoli, cauliflower, or potatoes.
- If you don't like spicy food, reduce the amount of chili sauce in the Manchurian sauce.
- You can also add a dash of sesame oil to the Manchurian sauce for extra flavor.
