Veg Manchurian Recipe with Manchurian Sauce

Veg Manchurian is a popular Indo-Chinese dish made with mixed vegetables that are coated in a batter and deep-fried. It is then served in a sweet and spicy Manchurian sauce. Veg Manchurian is a delicious and versatile dish that can be served as an appetizer, main course, or side dish.

Ingredients for Manchurian Balls:

  • 1 cup finely chopped cabbage
  • 1/2 cup grated carrot
  • 1/4 cup finely chopped capsicum (green bell pepper)
  • 1/4 cup finely chopped spring onions
  • 3 tablespoons cornstarch
  • 3 tablespoons all-purpose flour (maida)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying

Ingredients for Manchurian Sauce:

  • 1 tablespoon oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 green chili, finely chopped (optional)
  • 2 tablespoons tomato ketchup
  • 2 tablespoons soy sauce
  • 1 tablespoon chili sauce
  • 1 tablespoon vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions:

To make the Manchurian balls:

  1. In a bowl, combine the cabbage, carrot, capsicum, spring onions, cornstarch, all-purpose flour, salt, and black pepper. Mix well.
  2. Add a little water at a time and mix until a soft dough forms.
  3. Divide the dough into small balls, about 1 inch in diameter.
  4. Heat oil in a deep-fry pan over medium heat.
  5. Fry the Manchurian balls in batches until golden brown and crispy.
  6. Drain on paper towels.

To make the Manchurian sauce:

  1. Heat oil in a pan over medium heat.
  2. Add the onion and cook until softened.
  3. Add the garlic, ginger, and green chili (if using) and cook for a minute.
  4. Add the tomato ketchup, soy sauce, chili sauce, vinegar, sugar, salt, and black pepper. Mix well.
  5. Bring the sauce to a boil.
  6. Reduce heat to low and simmer for 2-3 minutes, or until thickened slightly.
  7. Add the cornstarch mixture and stir until the sauce thickens.
  8. Add the fried Manchurian balls to the sauce and toss to coat.
  9. Serve immediately with rice or noodles.

Tips:

  • For extra crispy Manchurian balls, double-coat them in the batter.
  • You can also add other vegetables to the Manchurian balls, such as broccoli, cauliflower, or potatoes.
  • If you don't like spicy food, reduce the amount of chili sauce in the Manchurian sauce.
  • You can also add a dash of sesame oil to the Manchurian sauce for extra flavor.
