Shankarpali Recipe (Sweet Diamond Cuts)

Shankarpali is a popular Indian snack made of deep-fried dough that is cut into diamond shapes. It is a sweet and crunchy snack that is perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup ghee
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon salt
  • Oil for frying

Instructions

  1. In a large bowl, combine the flour, sugar, ghee, cardamom powder, and salt.
  2. Mix well until the dough comes together.
  3. Knead the dough for 5-7 minutes, or until it is smooth and elastic.
  4. Cover the dough with a damp cloth and let it rest for 30 minutes.
  5. After 30 minutes, divide the dough into four equal parts.
  6. Roll out each part of the dough into a thin sheet, about 1/8-inch thick.
  7. Cut the sheet of dough into diamond shapes using a sharp knife or pizza cutter.
  8. Heat the oil in a large frying pan over medium heat.
  9. Fry the diamond-shaped dough pieces in the hot oil until they are golden brown and crispy.
  10. Remove the fried dough pieces from the oil and drain them on paper towels.
  11. Let the shankarpali cool completely before serving.

Tips

  • For a more flavorful shankarpali, you can add a few drops of vanilla extract or almond extract to the dough.
  • If you don't have ghee, you can substitute vegetable oil or butter.
  • To make sure that the shankarpali is crispy, make sure that the oil is hot before frying.
  • Don't overcrowd the frying pan when frying the shankarpali. This will lower the temperature of the oil and make the shankarpali soggy.
  • Let the shankarpali cool completely before storing it in an airtight container.
