Shankarpali Recipe (Sweet Diamond Cuts)
Shankarpali is a popular Indian snack made of deep-fried dough that is cut into diamond shapes. It is a sweet and crunchy snack that is perfect for any occasion.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup ghee
- 1/4 teaspoon cardamom powder
- 1/4 teaspoon salt
- Oil for frying
Instructions
- In a large bowl, combine the flour, sugar, ghee, cardamom powder, and salt.
- Mix well until the dough comes together.
- Knead the dough for 5-7 minutes, or until it is smooth and elastic.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- After 30 minutes, divide the dough into four equal parts.
- Roll out each part of the dough into a thin sheet, about 1/8-inch thick.
- Cut the sheet of dough into diamond shapes using a sharp knife or pizza cutter.
- Heat the oil in a large frying pan over medium heat.
- Fry the diamond-shaped dough pieces in the hot oil until they are golden brown and crispy.
- Remove the fried dough pieces from the oil and drain them on paper towels.
- Let the shankarpali cool completely before serving.
Tips
- For a more flavorful shankarpali, you can add a few drops of vanilla extract or almond extract to the dough.
- If you don't have ghee, you can substitute vegetable oil or butter.
- To make sure that the shankarpali is crispy, make sure that the oil is hot before frying.
- Don't overcrowd the frying pan when frying the shankarpali. This will lower the temperature of the oil and make the shankarpali soggy.
- Let the shankarpali cool completely before storing it in an airtight container.
