Ingredients:
- 1 cup all-purpose flour
- 1/2 cup rice flour (optional)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
- 1/2 teaspoon finely chopped ginger
- 1/4 teaspoon finely chopped green chili
- 1 tablespoon chopped coriander leaves
- 1 tablespoon grated coconut (optional)
- 1/4 cup curd
- Water, as needed
- Oil, for deep frying
Instructions:
- In a large bowl, combine the all-purpose flour, rice flour, baking soda, salt, and sugar.
- Add the ginger, green chili, coriander leaves, and coconut (if using).
- Mix well, then add the curd and enough water to form a thick batter.
- Cover the bowl and let the batter rest for at least 30 minutes.
- Heat oil in a deep fryer or kadhai over medium heat.
- Once the oil is hot, drop the batter by spoonfuls into the oil.
- Fry the Goli Baji until golden brown and crispy.
- Remove the Goli Baji from the oil and drain on paper towels.
- Serve hot with chutney of your choice.

- If you don't have rice flour, you can use all-purpose flour instead.

- Be careful not to overcrowd the pan when frying the Goli Baji. This will lower the temperature of the oil and make the Goli Baji soggy.
