Vegetable Pakora Recipe
Vegetable pakora is a popular Indian snack or appetizer made with a variety of vegetables that are coated in a spiced batter and deep-fried. It is a crispy and flavorful dish that is perfect for any occasion.
Ingredients:
- 1 cup finely chopped cabbage
- 1/2 cup finely chopped carrot
- 1/4 cup finely chopped cauliflower
- 1/4 cup finely chopped capsicum
- 1/8 cup finely chopped french beans
- 1/4 cup chopped onions
- 1/2 to 1 teaspoon chopped green chilies or serrano peppers or 1 green chilli
- 1/3 cup chopped coriander leaves
- 1/2 teaspoon chopped ginger
- 1/2 cup besan (gram flour)
- 1/4 cup water or add as needed
- 1 pinch turmeric powder (ground turmeric)
- 1 pinch asafoedita (hing)
- 1/4 teaspoon carom seeds (ajwain)
- 1/4 teaspoon kashmiri red chilli powder or sweet paprika
- 1/4 teaspoon Garam Masala or curry powder
- salt as required
- oil as required, for deep frying
Instructions:
- In a large bowl, combine all of the vegetables, coriander leaves, ginger, besan, water, turmeric powder, asafoetida, carom seeds, kashmiri red chilli powder, garam masala, and salt. Mix well to combine.
- Heat oil in a deep frying pan over medium heat.
- Once the oil is hot, drop the batter by spoonfuls into the oil. Fry for 2-3 minutes per side, or until golden brown and crispy.
- Remove the pakoras from the oil and drain on paper towels.
- Serve hot with your favorite chutney or dipping sauce.
Tips:
- For a crispier pakora, use cold water in the batter.
- Do not overcrowd the pan when frying the pakoras. This will lower the temperature of the oil and make the pakoras soggy.
- Fry the pakoras in batches until golden brown and crispy.
- Serve the pakoras hot with your favorite chutney or dipping sauce.
