Vegetable Pakora Recipe

Vegetable pakora is a popular Indian snack or appetizer made with a variety of vegetables that are coated in a spiced batter and deep-fried. It is a crispy and flavorful dish that is perfect for any occasion.

Ingredients:

  • 1 cup finely chopped cabbage
  • 1/2 cup finely chopped carrot
  • 1/4 cup finely chopped cauliflower
  • 1/4 cup finely chopped capsicum
  • 1/8 cup finely chopped french beans
  • 1/4 cup chopped onions
  • 1/2 to 1 teaspoon chopped green chilies or serrano peppers or 1 green chilli
  • 1/3 cup chopped coriander leaves
  • 1/2 teaspoon chopped ginger
  • 1/2 cup besan (gram flour)
  • 1/4 cup water or add as needed
  • 1 pinch turmeric powder (ground turmeric)
  • 1 pinch asafoedita (hing)
  • 1/4 teaspoon carom seeds (ajwain)
  • 1/4 teaspoon kashmiri red chilli powder or sweet paprika
  • 1/4 teaspoon Garam Masala or curry powder
  • salt as required
  • oil as required, for deep frying

Instructions:

  1. In a large bowl, combine all of the vegetables, coriander leaves, ginger, besan, water, turmeric powder, asafoetida, carom seeds, kashmiri red chilli powder, garam masala, and salt. Mix well to combine.
  2. Heat oil in a deep frying pan over medium heat.
  3. Once the oil is hot, drop the batter by spoonfuls into the oil. Fry for 2-3 minutes per side, or until golden brown and crispy.
  4. Remove the pakoras from the oil and drain on paper towels.
  5. Serve hot with your favorite chutney or dipping sauce.

Tips:

  • For a crispier pakora, use cold water in the batter.
  • Do not overcrowd the pan when frying the pakoras. This will lower the temperature of the oil and make the pakoras soggy.
  • Fry the pakoras in batches until golden brown and crispy.
  • Serve the pakoras hot with your favorite chutney or dipping sauce.
