Rava vada, also known as suji vada, is a popular South Indian snack or appetizer. It is made with semolina (rava), yogurt, onions, spices, and herbs. Rava vadas are quick and easy to make, and they can be deep-fried or air-fried.

Ingredients:

  • 1 cup semolina (rava)
  • 1/2 cup yogurt
  • 1/2 cup finely chopped onions
  • 1 teaspoon grated ginger
  • 1 green chili, finely chopped
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon asafoetida (optional)
  • 1/4 teaspoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon salt
  • Oil for deep frying

Instructions:

  1. In a large bowl, combine the semolina, yogurt, onions, ginger, green chili, cumin seeds, asafoetida (if using), coriander powder, turmeric powder, and salt. Mix well.
  2. Add enough water to form a thick batter. The batter should not be too runny or too thick.
  3. Cover the bowl with a lid and let the batter rest for 15 minutes.
  4. Heat oil in a deep frying pan over medium heat.
  5. Once the oil is hot, take a small ball of batter and flatten it slightly. Make a hole in the center of the vada.
  6. Gently slide the vada into the hot oil. Fry for 2-3 minutes per side, or until golden brown and cooked through.
  7. Remove the vadas from the oil and drain on paper towels.
  8. Serve hot with your favorite chutney or sambar.

Tips:

  • For a more flavorful vada, you can add grated carrots, grated coconut, or chopped coriander leaves to the batter.
  • If you don't have asafoetida, you can omit it.
  • To air-fry the vadas, preheat the air fryer to 400 degrees Fahrenheit. Spray the vadas with cooking oil and air fry for 10-12 minutes, or until golden brown and cooked through.

  • Masala rava vada: Add 1 teaspoon of garam masala powder to the batter for a more flavorful vada.
  • Onion rava vada: Add 1/2 cup of finely chopped onions to the batter.

  • Coconut rava vada: Add 1/2 cup of grated coconut to the batter.
  • Coriander rava vada: Add 1/2 cup of chopped coriander leaves to the batter.

Serving suggestions

Rava vadas are typically served with chutney or sambar. However, you can also serve them with yogurt, ketchup, or any other sauce of your choice.

Storage

Rava vadas can be stored in an airtight container in the refrigerator for up to 2 days. Reheat the vadas in the oven or air fryer before serving.
