Shrimp and quinoa salad is a delicious and nutritious dish that combines the flavors of succulent shrimp, protein-packed quinoa, and various fresh vegetables. Here's a basic recipe to get you started:

Ingredients:

For the Salad:

  • 1 cup quinoa, rinsed and drained
  • 2 cups water or chicken/vegetable broth (for cooking quinoa)
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro or parsley, chopped (optional)

For the Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard

Instructions:

  1. 1- Cook the Quinoa:

  • In a medium saucepan, bring 2 cups of water or broth to a boil.
  • Add the rinsed quinoa and a pinch of salt.
  • Reduce heat to low, cover, and simmer for about 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
  • Remove from heat, fluff the quinoa with a fork, and let it cool.

        • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
        • Season the shrimp with salt and pepper.
        • Add the shrimp to the skillet and cook for 2-3 minutes per side or until they turn pink and opaque.
        • Remove the shrimp from the skillet and let them cool.
