Coffee Streusel Bundt Cake

Ingredients:
For the Streusel Topping:
- 1/2 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, cold and cubed
- 1 teaspoon ground cinnamon
For the Cake:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup brewed coffee, cooled (you can use instant coffee dissolved in water)
- 1/2 cup buttermilk
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a Bundt cake pan thoroughly to prevent sticking.
- Prepare the Streusel Topping: In a small bowl, mix together the flour, sugar, and ground cinnamon. Add the cold, cubed butter and use a pastry cutter or your fingers to blend it into the dry ingredients until you have a crumbly texture. Set this aside.
- Prepare the Cake Batter: In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set this aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Alternate adding the dry ingredients and the brewed coffee to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined. Don't overmix.
- Stir in the buttermilk until the batter is smooth.
- Assemble the Cake: Pour half of the cake batter into the prepared Bundt pan. Sprinkle half of the streusel mixture evenly over the batter. Then, add the remaining cake batter and top it with the remaining streusel mixture.
- Bake the Cake: Place the Bundt pan in the preheated oven and bake for approximately 45-55 minutes or until a toothpick or cake tester inserted into the center comes out clean.
- Cool and Serve: Once the cake is done, remove it from the oven and let it cool in the pan for about 15 minutes. Then, carefully invert it onto a wire rack to cool completely.
