Ingredients:

For the Brownies:

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

For the Rocky Road Topping:

  • 1 1/2 cups mini marshmallows
  • 1/2 cup chopped nuts (typically, walnuts or almonds)
  • 1/2 cup semisweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch (20x20 cm) square baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  2. In a microwave-safe bowl or on the stove, melt the butter. Allow it to cool slightly.
  3. In a separate bowl, whisk together the granulated sugar, eggs, and vanilla extract until well combined.
  4. Add the melted butter to the egg mixture and whisk until smooth.
  5. In another bowl, sift together the cocoa powder, flour, salt, and baking powder.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix; you want to avoid overworking the batter.
