Rocky Road Brownies
Rocky Road Brownies are a delicious dessert that combines the rich, fudgy goodness of brownies with the crunchy texture of nuts and the sweetness of marshmallows. Here's a recipe for you to try:
Ingredients:
For the Brownies:
- 1/2 cup (1 stick) unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
For the Rocky Road Topping:
- 1 1/2 cups mini marshmallows
- 1/2 cup chopped nuts (typically, walnuts or almonds)
- 1/2 cup semisweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch (20x20 cm) square baking pan with parchment paper, leaving some overhang on the sides for easy removal.
- In a microwave-safe bowl or on the stove, melt the butter. Allow it to cool slightly.
- In a separate bowl, whisk together the granulated sugar, eggs, and vanilla extract until well combined.
- Add the melted butter to the egg mixture and whisk until smooth.
- In another bowl, sift together the cocoa powder, flour, salt, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix; you want to avoid overworking the batter.
- Pour the brownie batter into the prepared baking pan and spread it out evenly.
- Bake in the preheated oven for approximately 20-25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).
- Remove the brownies from the oven, but leave the oven on.
- Sprinkle the mini marshmallows, chopped nuts, and chocolate chips evenly over the hot brownies.
- Return the pan to the oven for an additional 2-3 minutes, just until the marshmallows start to melt and turn golden brown. Be careful not to overcook them; you want them to soften and puff up but not burn.
- Remove the brownies from the oven and let them cool completely in the pan.
- Once cooled, use the parchment paper overhang to lift the brownies out of the pan and onto a cutting board.
- Cut into squares or rectangles, and enjoy your Rocky Road Brownies!
These brownies are best enjoyed when they are still a bit warm and gooey, but they also store well in an airtight container for a few days. Enjoy!
