Hara Bhara Kabab Recipe: A Delicious and Nutritious Vegetarian Kebab

Hara Bhara Kabab is a delicious and nutritious vegetarian kebab that is popular in India. It is made with a mixture of spinach, peas, potatoes, and spices, and is often served with a chutney or dipping sauce.

Ingredients:

  • 1 pound spinach
  • 1 cup green peas
  • 1 potato, boiled and mashed
  • 1/2 cup cilantro leaves, chopped
  • 1/2 cup mint leaves, chopped
  • 1 green chili, finely chopped
  • 1 tablespoon grated ginger
  • 1 teaspoon garam masala
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon salt
  • 1/4 cup bread crumbs
  • Oil for cooking

Instructions:

  1. Wash and blanch the spinach in boiling water for 2-3 minutes. Drain and cool the spinach, then squeeze out any excess water.
  2. In a blender, combine the spinach, peas, mashed potato, cilantro leaves, mint leaves, green chili, ginger, garam masala, coriander powder, cumin powder, turmeric powder, and salt. Blend until smooth.
  3. Transfer the spinach mixture to a bowl and add the bread crumbs. Mix well.
  4. Divide the spinach mixture into 10-12 equal portions. Shape each portion into a patty.
  5. Heat a little oil in a pan over medium heat. Fry the kababs for 2-3 minutes per side, or until golden brown and cooked through.
  6. Serve the kababs hot with chutney or dipping sauce.

Tips:

  • For a richer flavor, add a tablespoon of grated paneer (Indian cottage cheese) to the spinach mixture.
  • If you don't have a blender, you can finely chop the spinach and peas by hand.
  • If the spinach mixture is too wet, add more bread crumbs until it is of a bindable consistency.
  • You can also bake the kababs instead of frying them. Preheat the oven to 375 degrees Fahrenheit and bake the kababs for 15-20 minutes, or until golden brown and cooked through.
