Nippattu Recipe (Karnataka Style Crispy Nippattu)

Nippattu is a crispy deep fried rice cracker from Karnataka cuisine. It is a popular snack or side dish that is often served with tea or coffee. Nippattu are made with a simple dough of rice flour, peanuts, fried gram, sesame seeds, and spices. The dough is spread out thinly and deep fried in hot oil until golden brown.

Ingredients:

  • 1 cup rice flour
  • 3 tbsp peanuts
  • 3 tbsp fried gram
  • 1 tbsp dried coconut (optional)
  • 1 tbsp sesame seeds
  • ½ to ¾ tsp red chili powder
  • ½ tsp salt or use as needed
  • 2 sprigs curry leaves torn to small pieces
  • 1 tbsp hot oil very hot
  • ¼ cup water + more as needed

Instructions:

  1. Dry roast peanuts lightly until the skin begins to peel off. Cool them and pulse twice in a blender along with dried coconut and fried gram. The mixture must be coarse with some split peanuts here and there.
  2. Add rice flour to a large mixing bowl. Also add crushed peanut powder, sesame seeds, curry leaves, red chili powder and salt. If using rava and maida you can add them as well.
  3. Mix up everything well.
  4. Heat 1 tbsp oil until very hot in a kadai. Pour this to the flour mixture. The oil must sizzle when it is added.
  5. Mix up everything well.
  6. Now add water as required and start to knead the dough. Knead to a smooth and nonsticky dough.
  7. Pinch a small ball-sized dough and smoothen.
  8. Place a plastic sheet on a flat surface and spread the dough into a thin circle, about 1/8 inch thick.
  9. Cut the dough into small circles using a cookie cutter or a glass.
  10. Heat oil in a deep frying pan over medium heat.
  11. Once the oil is hot, fry the nippattu in batches until golden brown and crispy.
  12. Drain the nippattu on paper towels and serve immediately.

Tips:

  • For extra crispy nippattu, spread the dough as thinly as possible.
  • If the dough is too sticky, add more rice flour.
  • If the dough is too dry, add more water.
  • Be careful not to overcrowd the pan when frying the nippattu.
  • Fry the nippattu over medium heat so that they cook evenly.
  • Serve the nippattu immediately for the best flavor and texture.
