Ingredients:
- 1 cup rice flour
- 1/2 cup semolina (sooji)
- 1/4 cup all-purpose flour (maida)
- 1/2 cup finely chopped onion
- 1 to 2 finely chopped green chilies
- 8 to 9 chopped curry leaves
- 3 tablespoons chopped coriander leaves
- Salt to taste
- 1 pinch hing (asafoetida)
- 1 tablespoon oil, to be heated
- 4 to 4.5 tablespoons water or add as required
- Oil for deep frying
Instructions:
- In a bowl, combine the rice flour, semolina, all-purpose flour, onion, green chilies, curry leaves, coriander leaves, salt, and hing. Mix well.
- Heat the oil in a small bowl or steel measuring cup. Add the hot oil to the flour mixture and mix well.
- Add water in parts and begin to mix and form a dough. The dough should be soft and pliable.
- Pinch small balls of dough and flatten them into vadas.
- Heat oil in a deep frying pan over medium heat.
- Deep fry the vadas in batches until golden brown and crispy.
- Remove the vadas from the oil and drain on paper towels.
- Serve hot with chutney or dip of your choice.
Tips:
- For a crispier vada, use hot oil when mixing the dough.
- Do not overcrowd the pan when deep frying the vadas.
- Serve the vadas immediately for the best flavor and texture.
