Ingredients:

  • 1 cup rice flour
  • 1/2 cup semolina (sooji)
  • 1/4 cup all-purpose flour (maida)
  • 1/2 cup finely chopped onion
  • 1 to 2 finely chopped green chilies
  • 8 to 9 chopped curry leaves
  • 3 tablespoons chopped coriander leaves
  • Salt to taste
  • 1 pinch hing (asafoetida)
  • 1 tablespoon oil, to be heated
  • 4 to 4.5 tablespoons water or add as required
  • Oil for deep frying

Instructions:

  1. In a bowl, combine the rice flour, semolina, all-purpose flour, onion, green chilies, curry leaves, coriander leaves, salt, and hing. Mix well.
  2. Heat the oil in a small bowl or steel measuring cup. Add the hot oil to the flour mixture and mix well.
  3. Add water in parts and begin to mix and form a dough. The dough should be soft and pliable.
  4. Pinch small balls of dough and flatten them into vadas.
  5. Heat oil in a deep frying pan over medium heat.
  6. Deep fry the vadas in batches until golden brown and crispy.
  7. Remove the vadas from the oil and drain on paper towels.
  8. Serve hot with chutney or dip of your choice.

Tips:

  • For a crispier vada, use hot oil when mixing the dough.
  • Do not overcrowd the pan when deep frying the vadas.
  • Serve the vadas immediately for the best flavor and texture.
