Dahi Vada Recipe (Dahi Balla)
Dahi vada is a popular Indian snack or chaat dish made with lentil fritters soaked in yogurt and topped with chutneys and spices. It is a delicious and refreshing dish that is perfect for a hot summer day.
Ingredients:
- 1 cup urad dal (skinned black gram)
- 1/2 cup moong dal (skinned yellow gram)
- 1/2 inch ginger, grated
- 1 green chili, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon cumin seeds
- 1/8 teaspoon hing (asafoetida)
- Oil for frying
- 2 cups yogurt
- 1/4 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 cup tamarind chutney
- 2 tablespoons mint cilantro chutney
- 1/2 teaspoon roasted ground cumin (jeera powder)
- 1/4 teaspoon Kashmiri red chili powder
- Cilantro leaves, chopped, for garnish
Instructions:
- Wash the urad dal and moong dal separately and soak them in water for 4-5 hours.
- Drain the water and grind the urad dal and moong dal in a blender to a fine paste, adding a little water as needed.
- Transfer the batter to a bowl and add the ginger, green chili, salt, cumin seeds, and hing. Mix well.
- Heat oil in a kadhai or deep frying pan over medium heat.
- Wet your hands with water and scoop out a small amount of batter. Shape it into a ball and drop it into the hot oil.
- Fry the vadas until they are golden brown and cooked through.
- Remove the vadas from the oil and drain them on paper towels.
- In a bowl, whisk together the yogurt, salt, and sugar.
- Place the vadas in the yogurt mixture and soak them for 1-2 hours.
- To serve, divide the vadas among serving plates.
- Drizzle the tamarind chutney and mint cilantro chutney over the vadas.
- Sprinkle with the roasted ground cumin and Kashmiri red chili powder.
- Garnish with cilantro leaves and serve immediately.
Tips:
- For extra soft vadas, soak the dal overnight.
- To check if the batter is ready, drop a small amount of it into a bowl of water. If the batter floats to the top, it is ready.
- Fry the vadas in batches so that they do not overcrowd the pan.
- Do not overcook the vadas, or they will become hard.
- You can also add other vegetables to the batter, such as onions, carrots, or potatoes.
- Serve the dahi vadas with your favorite chutneys and spices.
