  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup raisins or dried cranberries (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
  2. Wash the sweet potatoes, prick them with a fork, and microwave them until they are soft and can be easily mashed. Alternatively, you can bake them in the oven for about 45 minutes at 375°F (190°C). Once they are cooked, let them cool slightly, peel, and mash them. You should have about 1 cup of mashed sweet potatoes.
  3. In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Mix until well combined.
  4. Add the eggs and vanilla extract to the sugar-butter mixture and beat until smooth.
