Salted toffee is a delicious confectionery treat that combines the rich, sweet flavor of toffee with a hint of saltiness. It's made by heating sugar, butter, and often corn syrup together until it reaches a high temperature, creating a caramelized mixture. The addition of salt, typically in the form of sea salt or kosher salt, adds a contrasting savory element that balances the sweetness of the toffee.

Here's a basic recipe for making salted toffee:

Ingredients:

  • 1 cup (2 sticks) unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup light corn syrup
  • 1/4 teaspoon salt (or to taste)
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet or dark chocolate chips
  • 1/2 cup chopped nuts (optional, like almonds or pecans)
  • Sea salt or kosher salt for sprinkling

Instructions:

  1. Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a heavy-bottomed saucepan, melt the butter over medium heat.
  3. Stir in the sugar, corn syrup, and salt. Continuously stir the mixture until the sugar has completely dissolved.
  4. Attach a candy thermometer to the side of the saucepan and increase the heat to medium-high. Cook the mixture, stirring occasionally, until it reaches a temperature of 300°F (hard crack stage). This will take around 10-15 minutes.
  5. Once the mixture reaches 300°F, remove it from the heat and quickly stir in the vanilla extract.
  6. Pour the hot toffee mixture onto the prepared baking sheet and spread it into an even layer using a spatula.
  7. Immediately sprinkle the chocolate chips evenly over the hot toffee. Let them sit for a minute to soften, and then use a spatula to spread the melted chocolate into an even layer.
  8. If you're adding nuts, sprinkle them over the melted chocolate.
  9. While the chocolate is still soft, sprinkle a generous amount of sea salt or kosher salt over the top. The salt will adhere to the chocolate.
  10. Allow the toffee to cool and harden completely, either at room temperature or in the refrigerator.
  11. Once the toffee has cooled and hardened, break it into bite-sized pieces.
