Sure, here is a recipe for Chicken Lettuce Wraps with Peanut Sauce:

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1/2 onion, chopped
  • 1 carrot, shredded
  • 1/2 cup chopped cilantro
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon Sriracha sauce (optional)
  • 12 large lettuce leaves

Instructions:

  1. In a medium bowl, combine the chicken, cornstarch, salt, and pepper. Toss to coat.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook, stirring constantly, until browned and cooked through, about 5 minutes. Remove from the pan and set aside.
  3. Add the onion and carrot to the pan and cook, stirring constantly, until softened, about 3 minutes.
  4. Stir in the cilantro and cook for 1 minute more.
  5. In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, and Sriracha sauce (if using).
  6. To assemble the lettuce wraps, place a lettuce leaf on a plate. Top with some chicken, onion, carrot mixture, and peanut sauce. Fold the lettuce leaf in half and enjoy!

Tips:

  • You can use any type of lettuce you like for this recipe. I like to use romaine or butter lettuce.
  • If you don't have Sriracha sauce, you can use another hot sauce, such as Tabasco or cayenne pepper.
  • Serve the chicken lettuce wraps with your favorite dipping sauce, such as soy sauce or sweet and sour sauce.

Enjoy!
