Chicken Caldereta
Chicken caldereta is a Filipino stew made with chicken, potatoes, carrots, bell peppers, and a tomato-based sauce. It is a hearty and flavorful dish that is perfect for a cold day.
The name "caldereta" comes from the Spanish word "caldera," which means "cauldron." Caldereta is thought to have originated in the Philippines during the Spanish colonial period.
Chicken caldereta is typically made with boneless, skinless chicken thighs or breasts. The chicken is cooked in a tomato-based sauce that is flavored with spices such as chili peppers, garlic, and bay leaves. Other vegetables such as potatoes, carrots, and bell peppers are often added to the stew.
Chicken caldereta is typically served with rice. It can also be served with bread or noodles.
